Smoking To smoke our meats, we avoid to add flavours directly into the meat but use a traditional procedure, perfectly consistent with the standards of quality of our company. This traditional process does not cover the flavour of the meat, but rather increases it for the pleasure of connoisseurs who appreciate its taste. COMPANY PROFILE 'Caseificio Le Delizie', founded in 1993, is a family company, producing 'mozzarella di bufala'. The buffalo milk has a precious and delicate sweet flavor, and is rich in lactose, lipids, proteins and salts. Thanks to our modern technology, as well as to the ancient know-how of our experienced dairymen, our product, with its sweet and aromatic taste, is appreciated by a lot of Italian and foreign gourmets. 'Caseificio Le Delizie' throughput amounts to 2,0/2,5 metric tons per day, as our production facilities capacity can reach 3,5/4,0 tons per day. Modern milking systems allow for a vey accurate control of the hygiene safety level. PRODUCTS: Bocconcini (eggs) of mozzarella di bufala Smoked bocconcini of mozzarella di bufala, Braid of mozzarella di bufala Buffalo ricotta PRODUCTION PROCESS The mozzarella di bufale is produced, according to the ancient processing guidelines, using only buffalo milk, with the addition of rennet (lactic ferment) and salt. Only 100% raw milk, just milked and immediately transferred to the dairy, can produce the real mozzarella di bufala. Filtering and pasteurising Fresh milk, highly selected, arrives each day at the dairy facilities and is stored in containers that keep its organoleptic characteristics. Before further processing, the milk is freed from all impurities and foreign bodies. Then it is conveyed in a pasteurization plant, where it undergoes a heat treatment at a temperature about 35 Centigrades. Later, the milk is channelled into the coagulation tanks. The curd In the coagulation tanks, selected bacterial cultures are added to the milk, in order to achieve a suitable degree of acidity. The rennet is then added to the liquid curd. After an hour and a half the curd is cut into small pieces and put into the maturation tub, where it reaches the desired pH and becomes ready to be spun. Spinning In the spinning plant, the matured curd is soaked in boiling water until it reaches a softness and elasticity level, suitable to get the various shapes and sizes. The typical shape of real buffalo mozzarella is obtained by traditional handwork that our craftsmen have acquired by generation. Hardening and Salting The mozzarella is then dipped into tanks at a constant temperature, in order to harden. Then the product is undergoes the proper salting process.
